Mahaniyom Cocktail Bar Unveils Resourceful Vol. 4 in Bangkok

Mahaniyom Cocktail Bar, is the creative collaboration of Ronnaporn “Neung/Ronny” Kanivichaporn — multi-award-winning bartender and  Bacardi Legacy World Champion 2019 — alongside Chennarong “Janz” Bhumichitr, Chef Chalee Kader, Chef Randy Noprapa, and Nichapa Mungpien. Since opening in 2022, the bar has quickly established itself as one of Bangkok’s most inventive cocktail destinations.


Recognised as Best New Opening by London Essence in 2023, Mahaniyom debuted on Asia’s 50 Best Bars at No. 22 before climbing to No. 18 in 2024, and appearing again in the 2025 extended rankings at No. 71.

Building on its acclaimed Resourceful Cocktail philosophy, the bar’s latest menu embraces a nose-to-tail approach, transforming local and seasonal ingredients — from peel to seed — into refined, expressive cocktails that unite sustainability with storytelling.

Tamarind

Young tamarind prepared in the style of traditional Thai fruit preserves. Soft green-pink tones, gently tart and lightly astringent, with a clean, refreshing finish that awakens the palate.

Cashew

Pickled cashew fruit softened with white vinegar, sugar, salt, and orange peel. Bright acidity meets tropical softness, delivering a restrained, elegant balance of sweet and sour.



Papaya

A light tiki-inspired cocktail built around papaya juice, passion fruit, and rum. Papaya seeds add subtle bitterness, while papaya leaves lend herbal depth. Finished with a whisper of maraschino cherry—sunlit, playful, yet controlled.


Dragon Fruit

Gin infused with dragon fruit flesh and agave, complemented by syrup from the fruit’s peel. A touch of bilimbi introduces an earthy, refreshing acidity. Smooth, rounded, and gently sweet.

Shellfish

A coastal expression. Mineral vodka infused with dried shellfish, cockle shells, garlic pickle, yuzu, and white wine. Finished with a delicate layer of coconut oil scented with basil and acacia. Briny, savoury, and unapologetically maritime.


Tomato

A savoury, sustainability-driven cocktail. Clear tomato water contrasts with crushed cherry tomatoes and dried skins. Green tomato juice adds depth, lifted by northern Thai long pepper, a trace of fish sauce, and a mezcal sour backbone. Savoury, smoky, alive.



Pumpkin

Unexpectedly refreshing. Pumpkin fibre delivers a clean, melon-like texture, infused with vodka and white turmeric syrup. Topped with warm pumpkin foam and cracked black pepper. Soft, earthy, and quietly complex.


Toddy Palm

Palm fruit and fibres blended with bourbon and Scotch, carrying gentle woody and humid notes from palm leaves. Herbal palm root liqueur meets a house-roasted Thai tea infusion. Served with a salty, creamy Thai rice snack for contrast.

Mulberry

A savoury-leaning cocktail for wine lovers. Salt-pickled mulberries and fermented juice offer sharp acidity and depth, designed to be enjoyed alongside its garnish.


Mushroom

Creamy, comforting, and indulgent. Earthy mushroom notes layered with malted chocolate (called Milo in Thai) richness, finished with a decadent garnish. A quietly luxurious digestif.


With Volume 4, Mahaniyom Cocktail Bar presents its strongest and most cohesive menu to date. The interplay between scent and flavour is more deliberate and finely tuned, while select cocktails have been thoughtfully pared back to enhance clarity and approachability. The result is an exceptional lineup that balances innovation with restraint, showcasing inventive techniques and refined flavour combinations that resonate with both adventurous and discerning palates.
