AETHER Rooftop Bar : Cocktails at the Edge of Light and Sound

At Aether, Bangkok’s newest rooftop destination, cocktails are conceived not simply as drinks, but as spatial experiences—liquid expressions of mood, movement and atmosphere, suspended high above the city.

The menu is divided with quiet clarity between contemporary signatures and enduring classics, each composed with restraint and intention. Rather than overt theatricality, Aether favours subtle complexity: layers of aroma, texture and flavour that unfold gradually, in tune with the shifting rhythms of the night.

The house signatures, priced at 520 baht, demonstrate a confident, almost architectural approach to mixology.

Graviton is dark and contemplative, built on Phraya rum and infused with wild mushroom, Campari, soy sauce maple sugar and hinoki bitters. Savoury, smoky and deeply umami, it evokes forest, wood and earth rather than fruit or sugar—a drink that resists easy categorisation.

At the other end of the spectrum, City Flora moves toward brightness and botanical finesse. Roku gin is layered with ginger flower compote, mace, rhubarb pandan syrup and malic acid, resulting in a cocktail that feels at once floral, green and gently acidic—tropical in reference, yet distinctly urban in execution.

Oasis offers a moment of sunlit relief. Reposado tequila is softened with bergamot and neroli, accented by cardamom and pineapple, before being lifted with sparkling wine. The effect is citrus-forward and softly spiced, with a buoyant, effervescent finish that seems tailored for twilight hours.

Minimalist in structure yet expressive in scent, Lumen refines the gin and tonic through the addition of ylang-ylang and Mediterranean tonic water. Delicately floral and crisply bitter, it reads more like a perfume in motion than a conventional highball.

Alongside these contemporary expressions, Aether anchors its offering with a selection of classics, priced at 500 baht, executed with quiet authority rather than nostalgia. The Aperol Spritz is gently reworked with tequila and rose cordial, lending a floral softness beneath its luminous hue.

Mochatini layers bourbon, cacao dark, café drip and chocolate bitters into a drink that is indulgent yet composed.


The Old Fashioned, built on bourbon, sugar and Angostura bitters, remains uncompromising in its clarity.

Negroni, with gin, Campari and sweet vermouth, stands as a perfectly calibrated expression of bitterness and balance.

Together, the cocktail programme at Aether reflects a philosophy that privileges texture, aroma and emotional resonance over spectacle. Each drink feels conceived not only to be consumed, but to inhabit the space it occupies—somewhere between skyline, soundscape and slow-moving light.
