Firefly, Bangkok: In the Glow of Light, In Pursuit of the Firefly

Words: Pasuta Phongam Photos: Pasuta Phongam & Firefly Bar

There is a certain restraint to Firefly—a bar that resists spectacle in favour of atmosphere. Tucked into Bangkok’s evolving nightlife landscape, it operates with quiet confidence, where light is softened, details are deliberate, and the experience unfolds at an unhurried pace.

At the centre of this direction is Dicky Hartono, whose trajectory spans Dubai, Oman, Shanghai and Bangkok. His approach is less about performance and more about calibration—of flavour, texture and mood—positioning Firefly alongside the region’s more considered drinking destinations.

The forthcoming menu draws on the life cycle and anatomy of the firefly—not as a literal theme, but as a framework. Drinks are structured along a spectrum: fruity and light, bold and spirit-driven, bitter and complex, or bright and refreshing. A chart of flavour replaces rigid categorisation, allowing guests to navigate intuitively between profiles and textures. “In Pursuit of the Firefly." This chapter feels more introspective—still whimsical and playful, yet guided by a clearer sense of intention. The menu unfolds in four parts—Etymology, Ecosystem, Luminescence and Mythology—reading almost like a contemporary field guide.

Having visited earlier, we began with a selection from three of the chapters.

Where Is the Cricket, a cocktail that references the segmented anatomy of the firefly. Gin, ginger falernum and cricket protein are layered with chocolate, banana and lime, resulting in a profile that is unexpectedly rounded. Subtle sweetness emerges first, followed by tropical nuances—rambutan, pineapple, aloe—before settling into a warm, textured finish with a delicate crunch.

Even the Martini selection reflects this philosophy—precise, restrained and quietly confident, crafted for a discerning palate.

Journey to Amphawa introduces a more layered expression, infused with kaffir lime and a subtle reference to Lychee and coconut.

Technique remains understated yet exacting, with controlled batching and citrus used to create a gentle separation in the glass, alongside a quiet commitment to local ingredients. One cocktail captures the nocturnal charm of Amphawa, built on Prakaan Select Cask single malt with notes of tropical fruit, honey, vanilla and lemon peel, layered with kaffir lime, Phraya Elements 8 Year and Silpin Regal Lamduan. Blended with lychee, coconut and lime, and finished with a light vegan foam, it is complex yet balanced, with a final lift of floral aroma.

A few highlights from the previous menu continue to gently illuminate the night.

The River Flow offers a fluid, aromatic expression—Iron Balls gin layered with papaya, citrus, honey and lychee, finished with a soft egg white structure. It is composed without excess, delivering a gentle tropical lift.

Elegant Lady, by contrast, introduces a visual gesture: a dome of foam, precise and architectural, resting over an exotic base that balances fragrance and acidity. It is both tactile and refined, never tipping into theatrics.

Elsewhere, familiar forms are quietly reworked. A Paloma is deepened with beetroot and softened by agave and parsley, while a herbal gin composition combines tarragon, mint and melon water for a lighter, almost translucent profile.

'Grilled prawns with sauce'

'Salmon Tartare'

'Krathong Thong'

'Crisp Chicken Wings' The food offering follows the same logic: concise, balanced and designed to accompany rather than compete. Traditional Thai bar bites such as krathong thong, grilled prawns with sauce, and crisp chicken wings are refined in execution, retaining familiarity while aligning with the bar’s overall restraint.

Firefly does not seek reinvention for its own sake. Instead, it refines—adjusting, recalibrating, and allowing its identity to emerge with clarity. The result is a space where every detail feels considered. Not overtly expressive, but assured. Not theatrical, but luminous. The firefly, after all, does not compete with the dark—it simply glows.
