At Quinary, Antonio Lai continues to redefine the language of cocktails. The Diageo World Class 2015 Hong Kong & Macau Champion approaches mixology as a multisensory craft—where flavour, aroma, texture and even sound converge to challenge expectations with quiet precision.

The bar itself extends into Lai’s laboratory, where rotary evaporators, centrifuges and sous vide techniques are employed to distil and reconstruct spirits in-house. This technical rigour underpins a menu of over 40 cocktails, each presented with a balance of playfulness and control.

A defining signature, the Earl Grey Caviar Martini, encapsulates the ethos: citrus vodka and Cointreau layered with cucumber and elderflower, punctuated by bergamot “caviar” pearls and finished with an aromatic Earl Grey foam. It’s a composition that feels both unexpected and exacting—much like Quinary itself.

Opened in 2023 beneath the city’s relentless verticality, Artifact occupies a subterranean pocket within Jardine House’s Basehall 02—reframing the idea of a cocktail bar as something more immersive, almost cinematic. Conceived by Ezra Star and Beckaly Franks, and helmed by bar manager J Frank, the space draws on the architecture of underground cisterns, translating utility into a striking geometric language.

Entry is deliberately theatrical: circular apertures—echoing industrial pipework—pulse with digital light, leading into a dim, tunnel-like corridor where rotating fixtures, reminiscent of surveillance cameras, heighten a sense of quiet intrigue. Inside, a mirrored ceiling stretches perception, multiplying ribbed, sculptural forms into an illusion of infinite depth, while a glowing oculus overhead casts a soft, sunset-like hue across the room.

The drinks follow suit—precise, playful, and quietly experimental. Signatures such as The Grape One, alongside a rotating selection of spirit-forward, seasonal compositions. Underpinning it all is a considered approach to sustainability, with the majority of lighting locally produced—an industrial fantasy grounded, ultimately, in real-world restraint.

Perched on the 38th floor of The Henderson, Peridot reads as a study in “Natural Futurism.” Within Zaha Hadid’s fluid architecture, Studio Paolo Ferrari shapes an ethereal interior where sculptural marble meets softly lit glass, set against sweeping views of Central.

The culinary programme, led by Argentine chef Lisandro Illa, brings a fermentation-driven approach to plant-based haute cuisine. Drawing from his time at Noma and Popl, Illa treats time as a key ingredient, with many elements developed over 48 hours or more.

Dishes such as Earth and Sea Caviars and sparassis crispa mushroom fries explore texture with precision, while the signature Fleshy Fruits Cold Cuts—crafted from nut-based cheeses and fruit charcuterie—offers a quietly radical reinterpretation of form. The result is a menu that feels both experimental and composed, mirroring the space itself.

At Emmer Pizzeria & Café, pizza begins not with technique but with grain. Named after ancient emmer wheat, the concept blends organic emmer, rye and Italian flour for depth of flavour rather than nostalgia. Lower in gluten yet rich in nutrients, the result is a dough that feels thoughtful, distinctive and quietly refined.

Time plays an equally vital role. Grains are milled in-house, and the dough is left to ferment for 48 hours, developing lightness and structure. Baked in a rotating steel oven and finished with restraint, each pizza is designed to let the base take the lead—resulting in a balanced texture that is chewy, crisp and delicately airy with a golden edge.

A highlight comes in the kaprao kai dao pizza, an assured nod to Thai street flavours. Fragrant holy basil, chilli heat and savoury minced chicken unfold over the house-fermented base, crowned with a softly set egg that adds richness. It’s a composition that feels both familiar and unexpected—distinctly Thai, yet grounded in Emmer’s precise, flavour-driven craft.
