Sushi Ryo Omakase Pattaya is a restaurant in Bang Lamung District, North Pattaya, away from the hectic commercial area. It offers an omakase experience like no other. While most omakase restaurants often make guests feel they must always act formally, this small omakase restaurant of nine seats in Pattaya prefers a different approach. Its friendliness is the key to winning customers' hearts, as well as the quality of the ingredients and the chef's craftsmanship.
Chef Chaiyarat Dussanee, formerly a salesperson for a Japanese multinational conglomerate corporation in Thailand, has been working in Japanese cuisine for 8 years. His journey to becoming a chef is one of passion and dedication. It all started when he went to Los Angeles, USA, in 2014 to study. While studying, he also worked at a Japanese restaurant. It sparked his love for making Japanese food, and he decided to become a chef. He enrolled him at Dusit Thani Culinary School. Before opening his own restaurant, he used to work for other omakase restaurants. Realising their approaches weren't for him, he worked hard to save enough money to open his own. He believes in high-quality ingredients and offers a dining experience at affordable prices.
Sushi Ryo Omakase Pattaya serves 3 experiences: the 13-course omakase experience, the 16-course experience and the 19-course omakase experience. The courses may be different depending on the ingredients.
The meal starts with a set of enticing appetisers, setting the stage with a crunchy dish of deep-fried kisu, a comforting bowl of Ikura noodle soup, and a zesty and burning bowl of scallops with wasabi. These dishes aim to tantalise the taste buds and prepare guests for the culinary journey that lies ahead.
Oyster is one of the noteworthy dishes mentioned. The dish features a fresh, juicy oyster from Hyogo Prefecture nestled in a bed of seaweed in a pool of umami sauce made from dashi. To add some kick, a small dollop of freshly shaved wasabi is laid on top of the oyster.
Tachiuo is an exquisite dish that highlights the beltfish, also known as tachiuo, renowned for its pinkish firm flesh and a delightful, sweet flavour complemented by the scent of the open sea. The fish is expertly grilled to enhance its exquisite taste and texture.
Ama Ebi with Yuzu Zest is one of the sushis worth enjoying. This delectable nigiri sushi features fresh, succulent, sweet shrimp or ama ebi atop a perfectly seasoned bed of vinegared rice. The chef artfully enhances the flavours with vibrant and citrusy green yuzu zest, adding a delightful zing.
Shima Aji is a delectable course, featuring a succulent and flavourful piece of fish with rich, fatty, and salty notes complemented by a subtle hint of sourness, delicately placed on a bed of vinegared rice. The entire ensemble is brushed with a delectable umami sauce and garnished with fragrant negi and finely minced ginger, creating a harmonious balance of flavours and textures.
After indulging in many flavourful courses, the chef prepares a palate-cleanser, a handroll, filled with crisp and mildly spicy daikon, fragrant and tangy myoga, the bright, citrusy notes of yuzu, all complemented by a luscious and balanced sweet and savoury house sauce.
The meal progresses with the arrival of more sushi, each more enticing than the last. Among the selection is an intriguing offering that showcases an exceptional part of the tuna. This particular piece showcases both chutoro, the medium fatty tuna, and otoro, the fatty tuna belly. Together, they promise an incredible experience for the palate with their rich, buttery texture and taste.
Murasaki Uni provides a truly indulgent dining experience. This exquisite course showcases gunkan sushi, where the star of the show is Murasaki uni. This type of uni is renowned for its lusciously custardy texture, buttery flavour, distinct briny notes, and overall richness, making it a delightful treat for any sushi connoisseur.
Awabi features succulent slices of slow-cooked abalone that are delicately arranged atop a bed of fluffy rice. This culinary masterpiece is accompanied by a rich sauce derived from the essence of the abalone's liver, adding depth and complexity to every bite.
The Hamaguri Soup, served as the concluding savoury course, is crafted using fresh clams. This soup boasts a rich umami flavour complemented by a delicate sweet finish that beautifully harmonises with the plump clams.
Before moving on to the dessert courses, guests will receive a shot of house-made ume juice to clean their palates for the sweet indulgences.
One of the delightful desserts offered at Sushi Ryo Omakase Pattaya is Warabi Mochi. This restaurant's recipe stands out due to its unique taste. While the traditional recipe uses kuromitsu syrup made from molasses, this restaurant uses caramel, which complements the chewiness of the mochi made from warabiko or bracken starch and the nuttiness of kinako powder.
