Arva at Aman Tokyo Pairs Italian Soul with Tokyo Restraint

A few weeks ago, dinner at Arva, set within Aman Tokyo, began beneath a relentless downpour. Crossing the hotel’s threshold brought an immediate change of register: the city’s noise receded as a rain-soaked umbrella was taken, carefully folded and slipped into a protective sleeve. A small gesture, but one that distilled Aman service—precise, intuitive and quietly assured.

Moving deeper into the hotel, Otemachi’s financial district gave way to the calm of a forest retreat. The atmosphere was warm and relaxed, its luxury carried lightly. Large-scale artworks translated nature and the changing seasons into the interior, while the lobby team explained each piece with rare depth, revealing the stories behind the works rather than treating them as decoration.

Taking the elevator up to the 33rd floor, the main lobby leaves you speechless. It’s an expansive, soaring space over 30 meters high, yet designed with a refined sense of restraint rather than excess. Crafted by renowned architect Kerry Hill, it captures a gorgeous Japanese-modern aesthetic. The solemn, dark stone walls evoke Tokyo's sophisticated urban character, beautifully contrasted by an indoor garden at the center.

Beyond the entrance, Otemachi’s corporate tempo recedes. Artworks inspired by nature and the changing seasons punctuate the interior, interpreted by staff with an understanding that extends beyond a rehearsed introduction.

Dark stone walls echo Tokyo’s urban character, softened by an indoor garden at the centre. Above, monumental panels of traditional washi diffuse the light and discreetly screen the guest rooms beyond—an interior grand in proportion, yet disciplined in expression.

Arva sits beside the lobby in a quieter, more intimate setting. From a table by the window, chilled champagne accompanied the final light of a rain-cleared Tokyo sky.

Warm focaccia arrived first with Aman Tokyo’s own-label olive oil, aromatic yet notably light. Crisp artisanal breads and a selection of dips followed, establishing a simple Mediterranean rhythm before the first course.

Kampachi from Tokushima paired the firm, lightly fatty fish with string beans, Kita Akari potatoes, pine nuts and Genovese pesto. The combination was fresh and savoury, allowing the richness of the amberjack to meet the pesto’s herbal lift without overwhelming it.

Burrata and peperonata followed. Beneath its delicate outer skin, the cheese remained soft and creamy, balanced by the sweetness of slowly cooked Italian peppers.

The linguine with lobster formed the evening’s highlight. Cooked firmly al dente, the pasta was tossed with courgette and tomato, then finished with generous pieces of lobster—sweet, structured and clean in flavour.

For the main course, cotoletta alla Milanese was presented and carved tableside. The butter-fried veal cutlet arrived with lemon, cherry tomatoes and young rocket, its crisp golden crust giving way to lean, tender meat. A balanced red wine complemented the dish of the day.

Even the cutlery carried a sense of place: the steak knives were made for Aman Tokyo by Saladini, the historic knife maker from Scarperia, Tuscany.

Tiramisù concluded the meal through layers of savoiardi, ice cream and mascarpone mousse. Controlled sweetness and contrasting textures gave the Italian classic a lighter, more contemporary finish.

After dinner, the experience extended through the hotel. Aman Tokyo’s 30-metre indoor pool sits beneath another soaring ceiling, with panoramic night views transforming a fitness facility into one of the property’s most cinematic spaces.

A one-bedroom suite continued Kerry Hill’s restrained material palette through pale timber, dark accents and washi partitions. A separate dining area and kitchen added a residential quality.
