A World in a Glass: UNITY Unfolds at Wing Lei Bar, Wynn Palace

At Wynn Palace, Wing Lei Bar continues to position itself as a point of convergence—where global cocktail culture is shaped through exchange rather than origin. Having recently hosted the Asia’s 50 Best Bars 2025 awards, alongside a series of international guest shifts and visiting icons, the bar has further cemented its role as a stage for dialogue within the industry.

Its latest menu, UNITY, curated by Head Mixologist Mark Lloyd, reads as a distillation of movement: a year of travel, late-night conversations and cross-continental encounters translated into liquid form. The result is not simply a menu, but a narrative—one that traces connections from Mexico to Milan, Singapore to Seoul, articulated through four distinct chapters.

Structured as Classics, Sours, Alternatini and Stirred, each is anchored in a timeless cocktail style while reflecting a broader dialogue of cultural exchange. Behind the programme, Mark brings over 15 years of experience across Asia, having developed bar concepts across five continents. His career spans roles as operations director and consultant in Bangkok, Hong Kong and Shanghai, including time with the innovative J. Boroski group.


Let begins with Classics—familiar structures reworked through a global lens. Tommy’s Holiday reimagines Julio Bermejo’s margarita as an evolving expression, shifting monthly through regional flavours, while Not Quite a Penicillin introduces a Cantonese inflection to

Sam Ross’s smoky template, layering oyster sauce and sand ginger into its DNA.

Peanut Pistol, meanwhile, leans into a more playful register, combining bourbon, coffee liqueur and peanut butter into a drink that feels both nostalgic and self-assured.

In Sours, the tone softens into something more personal and transportive. Manchester Tart channels childhood memory through coconut-infused gin, custard and raspberry, balancing sweetness with restraint.

Kaya brings the gimlet into Southeast Asia, where sake, mezcal and kaya jam create a profile that is at once comforting and quietly inventive.


Dak-Galbi captures the energy of Seoul, layering chilli mezcal, banana-infused makgeolli and savoury marinade notes into a drink that feels bold, smoky and inherently social.

'Clear & Spressy Danger' The Alternatini chapter introduces a sense of looseness—drinks shaped by spontaneity and experimentation. Unfaithful Scotsman threads Scotch whisky through Beijing-inspired chilli crisp peach and cumin, while Clear & Spressy Danger refines the espresso martini with coffee-washed vodka, pandan and soy sauce, balancing intensity with clarity.

Basil Smash takes cues from Milan, where parmesan gin and pesto reframe the familiar herbaceous profile into something savoury, textured and distinctly European.

Closing the journey, Stirred offers a more grounded, contemplative rhythm. Hand of God builds on banana-infused whiskey, banana peel Campari and cacao, delivering a profile that is rich yet structured.

Miami Vice Negroni shifts into a more relaxed register, blending rum, strawberry, pineapple and coconut into a tropical reinterpretation of the Italian classic.

Soi on the Left returns to Asia with a nuanced take on Thai soy milk tea, layered with Chinese tea liqueur and rum—creamy, aromatic and quietly evocative of Bangkok’s street-side energy.

With UNITY, Wing Lei Bar moves beyond the idea of a menu as a static offering. Instead, it becomes a reflection of how cocktail culture is experienced today—fluid, collaborative and shaped by the places and people that define it.
