MUST Wine Bar by FIN Wine is located above Homeland on the second floor of Sodality Estate. The wine dining place recently reopened after the COVID-19 pandemic and relocated from its previous location at the renowned restaurant Bo.Lan. With a newfound independence, MUST Wine Bar now serves its owners' home recipes that will tantalise diners' taste buds.
Along with this, this wine and dine venue in Bangkok has an extensive collection of wines available for diners to pair with their meals. Moreover, MUST Wine Bar also acts as a showroom for wine distributor FIN Wine, where visitors can purchase their favourite organic, biodynamic and natural wines.
The story behind this new wine and dine venue in Bangkok is simple. Lily, Nuttiya Wisootsat, Co-Founder of MUST Wine Bar and Co-Owner of FIN Wine, stated that people often need food while drinking wine. She said, "We are all familiar with the phrase 'Hungry? Want to go find something to eat?' after a couple of bottles. Instead of letting people walk out to find something to eat, we provide food that isn't found elsewhere."
The food here is borderless and created by Lily and her mother, Ben, Benjawan Wisootsat, who also co-founded both the restaurant and distributor. Some dishes on the menu already have fans before the venue even opens.
MUST Have Dumplings has garnered a cult following. Before Must Wine Bar opened, whenever friends visited the Wisootsat home, they couldn't wait to savour this signature dish. Due to its popularity, the dish has earned a place on the menu. The gyoza is stuffed with minced pork seasoned with fresh young ginger and other spices and herbs until plump before being boiled and drizzled with homemade Chinese-style chilli oil and sprinkled with julienned young ginger, chives and white sesame.
Wonton Cream Chees with Ikura is a simple dish full of textures and flavours. The creamy, slightly salty, sweet cream cheese complements the briny, fishy, umami pulpy ikura. The crispy, salty, deep-fried wonton skin adds a delightful crunch to the dish, while the dill on top enhances the experience with its sweet and grassy aroma.
Brie, Honey and Orange Crostini is a food with exotic flavour combinations. The soft and crusty sliced baguette is layered with creamy, buttery Brie cheese and then topped with sweet and tangy orange slices. The contrast between the different flavours and textures creates a delightful culinary experience.
Grilled Zucchini and Stracciatella Crostini is a sweet and savoury dish. The zucchini is sliced, seasoned, and cooked before being placed on top of crispy crostini spread with milk-based stracciatella. Finally, chopped mint is sprinkled on top to add a touch of freshness.
Roasted Bell Pepper and Anchovy Crostini comprises crostini topped with roasted bell pepper, anchovies and fragrant basil. The roasted bell peppers add a subtle sweetness to the dish, while the anchovies provide a rich, umami flavour that perfectly balances the sweetness. The basil adds a fresh, aromatic note that ties everything together.
Eggplant Parm Croquettes is an offspring of a union between the Roman eggplant or aubergine polpettine and eggplant or aubergine parmigiana. The croquettes are made by mixing eggplant, breadcrumbs, cheese, and seasonings into balls, which are then fried until crispy and served in a pool of homemade marinara sauce. And to add some creaminess, the dish is topped off with some melted chees.
Southern Crab Curry Croquettes combine Geang Pu Bai Chaplu, a Southern Thai staple, with crab croquette. The dish features a unique flavour profile thanks to the combination of betel leaf notes, Southern Thai spiciness, and a crispy exterior with a soft interior.
MUST Meatballs is a dish consisting of a pair of huge meatballs served in thick marinara sauce and topped with loaded parmesan cheese. The meatballs are made using high-quality ground beef combined with breadcrumbs, eggs, herbs, and spices, which are then shaped into large balls and simmered in the savoury sauce until they are tender and juicy. The sauce, made with tomatoes, garlic, onions, and other seasonings, perfectly accompanies the meatballs. The parmesan cheese adds a nutty and salty flavour to the dish and complements the meatballs and sauce beautifully.
Sai Oua Scotch Egg is a British dish with a Northern Thai twist. Sai Oua, a spicy Northern Thai sausage, covers the whole jammy duck egg before being deep-fried in hot oil. The egg is then cut in half and served with Namprik Noom, a Northern Thai green pepper relish for an extra burning sensation. The jammy, rich yolk cut the spiciness from the Sai Oua.
Fattoush Burrata was inspired by Fattocuh salad during the mother-daughter duo's trip to Lebanon. The salad comprises a delicious blend of fresh mixed greens, juicy tomatoes, crunchy radishes, aromatic mints, and crispy Arabic flatbread called Khubz sprinkled over the salad. A ball of creamy burrata cheese is added to the top for extra creaminess.
Stracciatella, Almond, and N'duja Pasta is slightly spicy and creamy. The dish is made with al dente pasta, rich stracciatella cheese, crunchy almonds, and spicy N'duja sausage, all perfectly balanced by the refreshing taste of arugula. It's a perfect blend of flavours and textures that is sure to satisfy many pasta lovers.
Grilled Lamb Chops is made from tender and juicy cuts of lamb chops. The meat is carefully seasoned and grilled to perfection, resulting in a flavourful and succulent meal. The corn ribs, a perfect complement to the dish, are grilled to bring out their natural sweetness and served alongside the lamb chops. On the other hand, the stir-fried long beans add a nice crunch and a hint of smokiness to the dish. The combination of these perfectly grilled lamb chops, corn ribs, and stir-fried long beans will tantalise guests' taste buds.
Sautéed Frog Legs are a unique dish that is not commonly served in restaurants. Although it can be found in French restaurants, it is still rare. MUST Wine Bar serves sautéed frog legs with silky smooth, creamy and buttery pomme purée. The frog legs are succulent and go with the pomme purée.
Lily's Cookies is a hard-on-the-outside-but-soft-and-chewy-inside double chocolate cookie. The dessert is made with premium cacao sourced from Chumphon Province by Kad Kakao, which lends it a distinct and delectable taste. To enhance the flavours, fleur de sel from Samutsongkram Province is added, creating a perfect balance of bitterness, sweetness and saltiness.
Ugly Dirty Yummy Chocolate Cake is a boozy and chocolatey dessert. The soft, rich chocolate cake covered with a velvety layer of cream and dusted with cocoa powder is showered with all-natural vermouth, adding the dish's dark fruit, caramel and vanilla notes and enhancing the cocoa note.
