Glenfiddich Hosted TIME RE:IMAGINED Exclusive Dinner at Wang Hinghoi

An exclusive dinner marks the launch of Glenfiddich's latest collection, an expression of time, exquisite craftsmanship, and enduring legacy - a singular statement of Glenfiddich. The TIME RE:IMAGINED Collection includes Glenfiddich Single Malt 30, 40, and 50-Year-Old. Each dram has been aged for decades to produce a robust and sensually deep single malt, made with mastery and refined by time. Since the 1960s, a total of three Malt Masters have been at the helm, overseeing the maturation of these rare and precious casks. Several decades later, these single malts have reached the zenith of their maturity and are now ready for release.



As part of its Thailand launch, Glenfiddich TIME RE:IMAGINED collaborated with Natthapol "Nick" Pavapaiboon, executive chef and co-founder of Wang Hinghoi, to create an exclusive dinner menu based on the stories, tastes, and craftsmanship of Glenfiddich's single malt making traditions throughout the generations.



A brilliant blend of hearty oak and subtle sherry notes make Glenfiddich 30-Year-Old: Suspended Time an exceptional whisky. As a result of its 3 decades of maturation, it displays floral accents, woody notes, as well as long-lasting and honeyed characteristics. The whisky was paired with ‘Slow Aging Tajima Beef’, where 30-month grain-fed Tajima beef from Japan is seasoned and aged with various herbs to create a long-lasting taste that complements that of the single malt.



With Glenfiddich 40-Year-Old: Cumulative Time, remnants from previous batches are carried over and married with casks for each subsequent release. As opposed to other distilleries, Glenfiddich uses remnant vatting. Over time, it develops complex flavours such as deep-dried fruit, rich fruitcake, dates, raisins, and stewed apples. It finishes with oaky notes and subtle hints of peat and bitter chocolate. Pairing it with 'Duck Confit Lasagna' was a nice touch. Instead of ragu, Chef Nick made Thai red curry to assimilate the complex flavours of Glenfiddich 40-Year-Old. In order to enhance the sweetness of the curry and highlight the outstanding taste of Glenfiddich 40-Year-Old, raisins covered in dark chocolate and other dried fruits were garnished.


Glenfiddich 50-Year-Old is a complex, deep whisky aged for five decades. This whiskey has a distinct character due to the combination of orange peel, clementine, Madeira cake, and muscovado sugar. This single malt was made into a cocktail and was paired with ‘The Golden', a Lod Chong dessert with Thai melon. The Golden's Lod Chong was infused with saffron from India to yield the perfumed scent and elegant golden hue that characterises Glenfiddich.
