Centara Grand and Bangkok Convention Centre's Ventisi Pasticceria and Zing is one of the most famous patisseries in Bangkok. They offer a wide selection of coffees, pastries and gelatos and never fail to impress their customers. The pastry team is led by Pastry Chef Watcharapol Hiranvit, who created a huge highlight, the gigantic butter croissant in Bangkok named Grand Butter Croissant, which is a must-try.
This massive buttery pastry is produced in limited quantities of only 14 pieces per day. The proofing temperature and time are set at 28°C for 2.5 to 3 hours, with a baking temperature of 170°C for 45 minutes. This is significantly longer than the typical 19-minute bake time for a regular butter croissant in Bangkok. Chef Hiranvit used 400 grams of flour and 180-200 grams of butter per piece. The flour and butter are imported from France.
Chef Hiranvit uses French flour because the gluten content in French flour is more potent than other types of flour. According to him, this results in a perfectly flaky and crunchy exterior with a soft and stretchy interior, making for a delightful texture in his baked goods. He also pointed out that French butter has a unique and distinguishable aroma that adds a special touch to his Grand Butter Croissant.
One Ventisi's colossal butter croissant is large enough to serve 4-5 people. However, those who are feeling particularly adventurous and want to challenge themselves are welcome to try to eat the entire thing by themselves. Good luck!

If one is unable to finish the entire croissant or has purchased it as a takeaway, they can preserve it by storing it in a ziplock bag in the freezer. To reheat this butter croissant, simply place it in the oven or air fryer at 180°C for 7 minutes.
