For a decade, Chef Pom Chinese Cuisine by TODD has been one of the best Chinese cuisines in Bangkok. After the revamp in 2019 by Piti Bhirombhakdi or Todd, this restaurant in Rama III has never been the same. From the decor to the food concept, the restaurant combines tradition with contemporary flair.
On the first floor, guests can dine in a high-ceilinged dining room adorned in black, red, and gold. The live kitchen allows diners to watch their food being cooked fresh. On the second floor, a private dining room adorned in the same colour scheme is perfect for family gatherings or business meetings.
The room is decorated with a giant colourful Chinese vase with a traditional Chinese flower arrangement, a round table fit for ten people and a wooden bench with crimson cushion. The room's ceiling has unique curves inspired by Feng Shui, resembling a dragon's belly that brings prosperity, wealth, and good fortune.
The appearance of the restaurant isn't the only thing that has changed. The food concept has changed as well. Chef Thanarat Shuto, fondly called Chef Pom, had served traditional cuisine for many years. With the revamp, his food has been derived into modern Chinese cuisine.
Recently, Chef Pom launched an exquisite December set menu perfect for families celebrating the festive and year-end season with a gastronomic flair. This specially curated menu offers a wide range of dishes that will tantalise guests' and patrons' taste buds with their unique blend of flavours and textures.
The December set menu comprises various dishes prepared using only the finest ingredients. For starters, diners can relish the Honey Char Sui. Chef Pom uses stingless bee honey with unique sweet and sour tastes, making this a delectable blend of sweet and savoury flavours.
The Drunken Chicken with Sesame Jellyfish Salad is a refreshing appetiser that combines tender, juicy chicken with crunchy, flavourful jellyfish marinated in a tangy dressing. The sesame seeds add a nutty, toasty flavour to the dish, while the fresh herbs and vegetables provide a crisp, refreshing contrast.
The next dish is Sui Yak, a delectable Chinese dish with a succulent and crispy pork belly. The pork belly is cooked to perfection, giving it a satisfying crunch on the outside while remaining tender and juicy on the inside. The dish is rich in flavours and aromas.
Dried Oyster Soup with Fish Maw and Morel is a delectable dish consisting of a rich and flavorful broth infused with the umami taste of dried oysters. The soup is filled with tender and succulent fish maw, a delicacy known for its soft and chewy texture, further complemented by the meaty and earthy flavour of morel mushrooms.
The Pecking Duck is a classic Chinese delicacy cooked to perfection and served with steamed rice crêpes, pickled cucumbers, fresh cucumbers, carrots, radishes, scallions and hoisin sauce. The meat is cut into strips, coated with flour, deep-fried, then stir-fried with chillies and crispy garlic.
The Steamed Egg White with Garlic and Shrimp dish is bursting with delightful flavours and textures. The egg whites are airy and fluffy, giving a melt-in-the-mouth texture. The shrimps are sweet, crispy, and firm. The minced garlic adds a burst of aroma and flavour while also providing an additional layer of texture. All of the elements are on top of a bed of vermicelli.
The Oyster Sauced Abalone is one of the highlights. The Abalones are firm and sweet, swimming in umami brown gravy made of soy sauce, oyster sauce, and sesame oil, served with steamed broccoli and shitake mushrooms.
Another highlight is the Stir-Fried Grouper in Chicken Fat Gravy, which is loaded with flavour, mouthfeels, and textures. The grouper is cut into chunks and stir-fried with Chinese light gravy made with chicken fat, white mushrooms and chillies.
Chef Pom's Chae Po Rice is a twist on the classic. He uses Thai sticky rice instead of glutenous rice. The dish combines the rich flavours of Chinese sausage and preserved radish, topping a bed of perfectly cooked sticky rice. The Chinese sausage adds a smoky and savoury taste that complements the slightly sweet and tangy preserved radish.
To round off the meal, customers can enjoy the Mooncake Persimmon, a perfect dessert for the festive season. This dessert is a combination of sweet and tangy flavours that will leave you feeling satisfied and happy.
