Ike No Shiro is a blend of Okumidori, Saemidori, and Samidori Gokou cultivars produced by Hoshino Farm in Yame, Fukuoka, Japan, and is of exceptional quality. The first sip reveals a beautifully balanced flavour. The initial taste is edamame and creamy, with a cacao sweetness that's not overwhelming. This is followed by a rich umami note that adds complexity, making it refreshing and comforting. The matcha has a clean finish with a lingering earthy note. The texture is a highlight—silky and smooth, it glides across the palate effortlessly. The frothy layer created during preparation enhances the overall experience.
Matcha Cheesecake is an exquisite dessert that artfully blends rich flavours and contrasting textures. The velvety filling is meticulously assembled, starting from a layer with no matcha infusion and progressing to a layer with a generous infusion of premium matcha. Its velvety smoothness is perfectly complemented by the satisfying crunch of the biscuit crust, creating a harmonious interplay of textures. Each indulgent bite unveils a refreshing fusion of matcha and delicate sweetness, offering a truly delightful dessert experience.
Warabi Mochi is a unique and delightful delicacy that captivates the senses. This jelly-like confection boasts a luxuriously soft and chewy texture, exuding a subtle stickiness that tantalises the palate. The addition of a delicate syrup drizzle enhances the flavour profile, delivering a flawless equilibrium of sweetness and depth.
Toyo Mukashi Single Cultivar, produced by Tea Garden in Uji, Kyoto, Japan, has a rich, silky texture. It delivers an intense earthy matcha flavour with a subtle sweetness. The balance of creaminess with the vibrant matcha notes creates a satisfying depth, making each sip a refreshing treat. Pairing this with a house-made Wagashi such as Namagashi, which is made from rice flour with red bean or azuki filling, is ideal.
