Pain au Matcha is a cocktail made from the bar's orgeat syrup infused with Sarnies' sourdough croissant, adding sweet, buttery and baked pastry character to the drink. Dark rum with a hint of peppercorn, spices, cherry, dried fruit and pineapple goes with the sourdough croissant orgeat syrup and seaweedy and bitter matcha from Kyoto. Egg yolk adds extra richness and butteriness.
