Terroir Expression, a popular wine bar in Bangkok, first opened its doors in 2019 and quickly became a go-to spot for wine enthusiasts. However, in August 2023, Terroir Expression expanded its offerings and transformed into a full-fledged French bistro, serving traditional French cuisine to its patrons.
The menu also offers a wide range of options to choose from, including seafood, poultry, and beef, cooked to perfection with classic French techniques and flavours. The restaurant's experienced chefs use only the freshest and highest-quality ingredients to prepare each dish.
An appetiser like Razor Clams may seem simple, but it's packed with flavours, textures, and aromas. The razor clams are baked with garlic, butter, parsley, and herbed breadcrumbs. The sweet and briny tastes of the long-shaped clams are enhanced by the creamy, buttery, and slightly sweet butter. The garlic adds a garlicky, pungent aroma, while the chopped parsley adds earthiness and a peppery character to the dish. The herbed breadcrumbs offer a delightful texture and mixed herbaceous notes.
French Fries is a house-made potato snack. Potatoes are julienned before being fried in duck fat, resulting in aromatic, umami fries that are crispy on the outside and soft and smooth on the inside, thanks to the duck fat's high temperatures withstanding.
Salade de Tomates is a savoury and creamy salad made with colourful, juicy, crunchy sliced heirloom tomatoes that are carefully arranged on a plate, drizzled with olive oil and tangy vinaigrette and topped with a ball of burrata cheese oozes with rich, velvety creaminess.
Tiger Prawns with Herb Butter is a dish made with succulent giant prawns cooked to perfection in a rich and flavorful prawn jus. The dish is then elevated with a mushroom soup made from a blend of maitake and champignon mushrooms. The earthy, savoury flavours of the mushrooms complement the natural sweetness of the prawns. The herb butter adds a touch of indulgence, with its creamy texture and fragrant herbs enhancing the dish's overall taste and aroma.
The main dish, Beef Bourguignon, is a classic French dish beloved by many. The recipe involves slow-cooking beef tongue in a mixture of red wine and beef stock that is infused with herbs. Along with the beef tongue, mushrooms, shallots, and carrots are added. When the stock is reduced, and the beef tongue and vegetables are cooked to tender, they are then served with a creamy, velvety mashed potato.
A pasta dish like Pasta Duck Ragu is an elegant comfort dish. The rich and savoury duck ragu is mixed with al dente pasta in a pan, allowing the pasta to soak up the flavours of the ragu. Once ready, the noodles are then twirled with tongs and arranged on a plate as a bed for the remaining duck meat and ragu sauce. Then, a generous amount of fresh cream is added on top to balance the flavours.
Seabass Papillote is a refreshing seafood dish made by wrapping a seabass fillet in parchment paper with juicy cherry tomatoes, green and black olives, sliced peeled lime, and garlic and baking it until perfect. The paper wrapping ensures that the fish stays moist and tender. At the same time, the citrusy lime, tangy olives, garlicky garlic and sweet tomatoes infuse the seabass with a burst of refreshing flavours. Before eating, a staff will unwrap the parchment paper and pour some high-quality olive oil over the fish.
Roasted Chicken is a dramatic dish that involves fire, which adds to its visual appeal. The dish is prepared with a whole chicken stuffed with fragrant Thai rice and roasted until its skin becomes crispy and golden brown. Once the chicken is cooked, it is brought to the table by a staff member. To add a flair to the dish, the staff member ignites a cognac and pours it over the chicken, creating a beautiful flambé effect. The cognac also imparts a rich and complex flavour to the chicken. After the fire has subsided, the staff member returns the chicken to the kitchen, where the chef skillfully carves it into smaller pieces.
A dessert such as Profiteroles is a hot and cold dessert many need. The dish features a perfectly baked, light, airy choux pastry sliced in half and filled with a generous scoop of creamy homemade vanilla ice cream and then lavishly coated with a rich and velvety chocolate sauce.
To enhance the experience, guests and patrons can go to the walk-in wine cellar to choose the perfect wine for their meals. The wine cellar has various choices of wine, including sake, recently added to the collection.
